SUSTAINABLE WINEMAKING Here at Hilmy Cellars, we focus on making wines from hot climate varietals from around the world, with an emphasis on finding their truest expression in Texas. At Hilmy Wine, we believe through and through that wine is made in the vineyard. We strive for quality in farming, and work to achieve harmony among the various contributors of quality grapes. Our Guinea Fowl have proven to be wonderful insect control, happily munching on insects that would normally wreak havoc on the vines. It’s because of their ravenous appetite that we haven’t had to use pesticides to keep the vines free from insects.
